With my baklava (and other recipes), I secretly mix different varieties of the same seasoning. For example; try using some Siagon cinnamon with your regular cinnamon. The Siagon cinnamon has a very sharp bite and is too much all by itself, but when you mix it with another kind of cinnamon it works very well.
